Thoughts? Observations?
New car. New engine. New engines have more friction. Thus all other things being equal the newer engine will run a bit hotter. This is the reason for the 4K rpm limit during break in. Higher rpms can have the extra heat from this internal friction resulting in extreme wear as the oil breaks down from the heat/pressure.

But a new car can have new car problems. Be sure the radiator fans come on when they are supposed to. They should run all the time when the A/C is on but with this off they should come on when the coolant temp gets to -- unless Porsche has changed this -- to 212F. They shut off when the coolant temp drops to 205F. (The fans switch to high speed mode when the coolant temp climbs to 216F.)

Given that oil temp runs a bit hotter than the coolant temp (or a lot hotter when the engine is really being used hard) the oil temp seems about in line with what I would expect.

great info...I'll have to try out the driving in sport vs. normal vs. sport plus...but given I can't go above 4200 rpm or in full throttle, it might be wasted effort at this point...

The 991 engine is equipped with thermal management, something that the 997.2 does not have. This means that the engine is deliberately allowed to run hotter under light and medium loads in order to provide better thermal efficiency. You don't see that when you look at the coolant temperature gauge which is designed to remain steady at 90°C. In reality coolant temperature fluctuates between 85°C under heavy load to 105°C under light loads. It is likely that oil temperature is also affected indirectly by this new thermal management, i.e. oil is hotter in the 991 than the 997.2

Many years ago (before synthetics) Porsche used to recommend 280. I haven't found the 991's maximum yet but I ran across this interesting article which indicates the flash point of Mobile 1 is over 400.
http://www.inoanorton.com/docs/OilTemp.pdf. I think the real point is that it degrades before that, so the protection and life provided by the oil begins to go down as it reaches this higher temperature. And because we really don't know when it starts to degrade under high performance conditions, it's best to keep it well below the red line. One additional point is that the strategy used to be that the engine used to cool the oil in non race engines. Now they use the race approach and by using oil coolers, they help cool the engine and keep the oil temperature closer to the coolant temperature.

That said, I think the most interesting point might be; how close anyone that tracked their car last summer got to the red line? It may be that for the Carrera, we never get over 280-325 which probably provides close to 100% protection under the normal interval changes.

Very interesting that the temps are lower when running in sport and sport + mode.

I am doing my best to break in per the manual yet my salesman said that With Mobil 1 it wasn't necessary as its synthetic won't breakdown and that the RPM's been run up by the factory and his techs during prep anyway. He said break ins are a factory ruse that is meant to have us buy more cars? Didn't make sense so I asked him to look up manual which states a different tactic. I have heard both sides...drive as you would and the engine will break in better and faster than the normal break in recommended by the factory. So who has an opinion? Which is correct? I have been driving up to 5-K but not more. My salesman used to be a Porsche tech so I am curious as to the opinions out here.

You're da man, rnl! There are tons of 911's on the street where I live, but so far I've only seen 2 991's. We need to put more of us on the street!

When is was new, my car would run 230 when I was on the highway at a steady 75 MPH; I now have just over 10,000 miles on it and temperatures are 5 to 10 degrees lower due to break-in friction. Lowest it might get after it warms up in 196. No concerns.
