Theoretical Top Speed

You are right!

In the 3.6 Carrera, I showed 184 mph on the speedo at 7000rpm (I think there was 200 rpm left before redline) which was actually 178 mph on the GPS.
I was pretty surprised because Porsche lists the top speed at 177 mph! This was also done with 2 people in the car and a full trunk of luggage!
Given this observation, I thought the Turbo might actually have a top speed a few mph than the 189 that Porsche states.

It isn't that dangerous for the mechanics. More dangerous for your driver's license unless there's free speeds
Yep those 3.6l Carreras are fast! I've driven myself a same car to the same speed!
(It was too 178 mph on GPS, atually it was 296 km/h in the GPS and 305 km/h in the speedo)
...we have tested the limits...almost
That car's rated considerably lower at 285 km/h by the factory. Porsche is a bit conservative in its claims, always has been. That is a known fact.
Turbo isn't massively faster due to drag. That's why many fast Autobahn Porsches are narrowbodies (Ruf and 9FF for example have very fast narrowbody models.)

At 190mph you have about 300bhp equivalent aerodynamic resistence in the 996TT. So if your car has more than 300bhp, you can keep going.
High downforce cars such as the CGT also have downforce penalty at high speeds, equivalent to an incremental 600lbs of additional weight at top speed, over and above the aerodynamic drag, but on the 996TT downforce is very limited so not a factor.
