Clicking Sound in Rear Axle?

Can you affect noise while lightly (or not so lightly) applying brakes? Can be a loose pad getting knocked about a bit as the wheel turns and the rotor passes by. A bit of runout of the rotor and loose pad is all it takes.

Also, be sure not something in rotor hole or even something in tire like a nail or screw or something sticking out making contact with pavement as tire rotates.

As for the u-joint not right to just shove lube in there. Excess grease gest slung away from bearing and onto CV boot's inner surface. Can create a slight imbalance that can cause premature boot failure.

If you can't eliminate source of noise then half shaft removal and tear down probably called for.

After a good cleaning inspect for signs of wear or bearing distress. Any signs replace. If ok properly repack with proper grease and fit new boots and reassemble. Or just replace u-joint bearings with new ones and save the time to clean inspect and repack with grease. Be sure to fit new boots.
