Here are my thoughts and opinions
I bet they're using a 12 to 16 inch rollout, are at sea level on a cool day, are in a tuned car and using a professional driver to get the 0-60 time into the 3s. If a lengthy rollout is the case a zero inch rollout would add about a half second or so to the time.
The way the average Ferrari owner/driver rolls into the start or bogs along with being shifting challenged you'd be seeing 5 + second 0-60 times and mid to high 12s or even worse in the quarter mile.

I know for a fact that they use a "generous" roll out. I know because they told me.
