The Four Seasons behind Mandalay Bay is excellent, the hotel has no casino so it's quiet and service is top notch. You can always go out to other casinos for fun...or the MB is right next door.

We were at the Bellagio, great hotel.
If you get a chance, go to the bar/restaraunt at TheHotel in Mandalay Bay
also, go to the Danny Gans show, it was HILARIOUS
