The drivetrain losses in a Turbo should be higher since you are trying to transmit the engine's power to 4 wheels instead of 2. Obviously, there is a loss in translation there. In addition, the clutch of the Turbo is different from the GT cars, and from what I understand, this is part of the reason why GT2's put down the power better than the Turbo.
As for longitudinal g's, what you say is true, but I'm sure you would have more fun nailing the throttle on a Dodge Viper. Though turbos are supposed to feel faster, Ben's Carrera GT seemed to have at least as much "thrust" as my GT2!
But ultimately you are right, Turbo is for sporty touring/cruising in all different kinds of weather, GT2 and GT3 are for performance junkies on the track or twisties. GT3-RS is the purist of all modern Porsches, Carrera GT is the end all-be all of sports cars, period.
