I'm a huge GR fan. Forget the wood, forget the cocoa. I'm a purist. There is nothing more pleasing to my eye than Guards Red/Beige interior. Both my Porsches were ordered this way, and I would not change a thing. I also considered deviated stitching (red on black leather) but once I saw it, it was far too busy. I also like the beige with black deviated interior (black upper door section and black dash). Works well on the cab with black top, and black mats. Maybe black carpet, but I don't love black that much.

If your bored with Black leather then go for either Sand beige or Natural brown with guards red stitching.

Natural brown with red stitching will not look good.

I like the Beige interior but not with the wood. Wood is for Rolls.

Black with red painted seatbacks. full black leather everywhere (trim strip, door finishers, PCM Package Etc...) red seatbelts, red gauge faces, red painted shifter trim, red painted door openers. Will look great on a Cab, especially when the top is down, as the red seatbacks will be very visible to everyone! Good luck with your decision!

maybe i am partial to nat brwn/cf, but i think they'll look nice in guards red too

I don't think the cocoa is a bad choice. Tan, natural or black as mentioned are fine too. Scrap the wood though, I think aluminum would look better the cf with the cocoa.
