To answer your question the dyno runs I've seen are WOT, 4th gear, from 2000 rpm or so.

More importantly, if you feel this way about the shop then it's probably a very good idea to stop using them for dyno runs.

Most importanly , if you have many questions about the tune, then you might want to get a Durametric cable. It would give you many answers regarding boost and power and you don't have to rely on someone else. Actually it will give you ALL you need to know about boost pressure, including peak boost, and boost curve. See the ECU tune link in my signature and bbywu's Durametric DIY thread at top of forum page. A Durametric dyno simulation run could be done in 3rd gear, WOT from 2000 rpm.

The porsche dealer thinks the main problem is heat. Lack of cooling fans after an 1 1/2hr driving that am and then pulling from 11-1pm without fans on the intercoolers

They dynod the car without dedicated fans on each IC? Yeah, that's your problem. The dyno chart is worthless, and honestly I'd ask for a refund b/c they completely wasted your time by not putting fans on the ICs.
