one thing to keep in mind is aftermarket leather is almost never the fit and finish of OEM especially in respect to how it fits over panels.
i had my Z06 done up in leather by a big name in the business and it didnt hold a candle to the OEM Z06 leather option that they now offer.
OEM leather upgrades take into account how the panels fit together and how thick and what type the leather needs to be and how to mold and secure it properly ect.
we had a guy in the vetteforum from overseas who paid a stateside top name vendor over $50 K to redo the enterior. got the car back and had things coming apart.
if i were you, i'd pass up on the aftermarket dash. maybe do a steering wheel or something or wait and get a car later with the right options.
