If you're talking about getting it done to a pre-existing seat, it really isn't worth it. I'm not sure that it's even possible to order it after the fact, and even if it was, it would cost you a fortune. If on the other hand you're talking about getting it done to an order you're about to place, the various codes are in the order guides, the number and choice of which depends on what options you select (full leather, etc).

The only viable option for getting stitching done after the car is built is taking the car to a reputable leather upholstery place that does replacement upholstery. The leather can be removed, and I imagine they might be able to add additional color stitching over the existing stitching in some way (not replacing the stitching that holds the seat cover parts together). Its likely to be very expensive.

For my new car, my color stitching would have been yellow, and I felt over time the stitching would show dirt (get darker) and just be too much trouble to try and keep clean/fresh looking, so I opted not to order the seats with color stitching.

I have red stitching on my black seat and on the full interior (dash etc.) and it's beautiful. I bought my used and honestly, it was one of the tiny extras that made my buy the car.
