I have a 6 speed but notice that when I have driven Porsche automatics, including the PDK, they shift at very low RPM's. Why should we need to shift at higher RPM's with a stick?
I had 06 Cayman S Tiptronic as a loaner recently and it never even went into 1st gear. It started from stop in 2nd gear.

You don't. The original question was whether or not it was harmful to the engine to drive at certain RPM's.
IMHO, shift at 3,000 until the engine gets warmed up then shift anywhere you want as long as you aren't banging the rev limiter on a regular basis. The newer motors have tons of torque and you can still accelerate reasonably well as long as you stay above 1,000 or so rpm.
Keep in mind too that where PDK's shift is to some degree determined by how hard you are pressing the accelerator, engine vacuum, rpm, speed, etc. If will shift quick if you drive it like a granny or let the rpm's wind up if you put your foot into it. If you put it into sport or sport plus mode you get even more throttle response and higher shift points.
