Throttle Position not achieving 100%WOT
I was playing around with the diagnostics on my V8V and noticed that when the pedal is floored, I only get about 89%WOT on the TP reading. Is this normal? Shouldn't I be able to achieve 100%?
Many years ago, on my Esprit, I noticed the same behavior. Of course that car doesn't have throttle by wire and uses a throttle cable instead. You adjust it by moving a threaded stop bolt on the back side of the gas pedal in or out. This allows you to limit how far down you can press the pedal. You have to be careful not to move the stop too far in, otherwise it is possible to snap the throttle cable when stomping on the gas because of allowing too much travel.
By playing with the adjustment, I was able to get from the previous 95%WOT to 100%WOT. The car felt as if I was getting a free boost in horsepower and I was able to spin the tires in the first three gears.
So I wonder: is it possible to do the same on my Aston?

just a couple shots in the dark:
did it do this in every gear, or only at lower gears?
some cars limit the boost/throttle/etc that can be delivered in lower gears. the Mazdaspeed3, for example, limits boost in lower gears because of traction issues. maybe this is happening with the throttle on your Vantage?
did you try taking the traction control off? maybe restricting throttle (and power with it) is a way for the traction control to maintain traction.
Btw, I lost about 10 hp on the dyno with the traction control on vs turning it off. So a restricted throttle may have been the reason.

I know that ford throttle bodies often don't read 100% at WOT. The last 10-15 degrees are relatively unimportant because the throttle blade is in the shadow of the central linkage and doesn't provide any more airflow.
