Hello,
I don't particularly know what Apple CarPlay is as I am a Samsung fan, but the person I bought my Bentley from had removed the CD changer in the glove box and installed this device:
https://gromaudio.co.uk/products/gro...h-capable.html
He was then able to use his iPhone via USB to play whatever he wanted on the radio. I don't know if that is what you're looking for?
I also purchased the additional Bluetooth unit from Grom, so now I can stream Spotify directly to the device in the glove box without needing a USB cable.

I have a 2006 Bentley Continental GT and recently did an audio system upgrade.
Stage 1 was to purchase a new head unit. I got this from VI Products in the UK. If you buy it from them directly, you'll save a lot of money (and tax). If you get it through a distributor, you'll send up paying around USD2400. I paid GBP1,300.
Stage 2 was buying a new stereo system that will fit in the unit. Only Double Din fits. Kenwood, Alpine, and Pioneer all have units that will fit. You should only buy one of these brands because the connectors will need to work with the head unit.
Stage 3 is to install the stereo in the head unit.
Stage 4 is to install the head unit (with the new double din unit installed inside it) into the car.
As part of the installation, you'll need to remove the stock CD changer in the glove compartment of your Bentley.
That's about it, good luck.
Oh, and one past point, IV Products in the UK are extremely helpful and were a big help in sorting out which units will work with their system.

Hello, before the GT V8 i had a 991S from 2013
in the Porsche i installed a box coming from Joyeauto, it gives CarPlay + other features on your stock
now i believe it is available on Bentley up to 2017…you could ask them for your specific car
regards,
Pat
