We too use Griot's sheepskin mitt..(they are expensive, but worth the money) it comes with a rubber insert glove for the cold weather.
We use a variety of suds for our washes... depending on the finish. A product such as Meguiar's Gold Class soap is pretty harsh when used on coat(s) of waxes/sealants. We use P21S shampoo, Zaino's soap, Menzerna's auto shampoo, and Adam's Polishes's soap.

Whatever mitt you get make sure it's a natural sheepskin and not synthetic. As far as a soap goes, you want something that is pH balanced. I've heard good things about the P21S soap; I use Zymol Clear.

I use Griot's shampoo and their Boar's hair brush. The road grime seems to easily fall off the Boar's hair when you swish it in the bucket rather than getting stuck in the fibers of the mitt.....less scratches.

I spend a lot of coin on detailing products and haven't found huge differences in wash mitts. I usually go with one of the cheaper sheepskin ones and then just throw them away after a couple of uses. I find that the grime and grit accumulates (even if put through a washing machine) over time. Also, be sure to use a different mitt on the lower rocker panels than the upper body.
As for soap. I usually use meguires gold class. It isn't expensive and it is very mild. If you keep a good coat of wax on the car as well as wash often, the soap/mitt dont matter.
My 2cents..................

I have found that using fresh microfiber towels as wash rags work the best for my black car. Every mitt that I have come across has been way too harsh for the finish. You can buy packs of microfibers at costco or bj's wholesale for real cheap.

unfortunately if anything gets caught in the microfiber you end up doing more damage then the wash mitts or the wool mitts.
The smallest thing can get lodged in the microfiber and you might not even realize it.

I wash, polish and quick detail with Zaino. When washing, I use several micorfiber cloths... lower, upper and wheels. I dry with the absorber. Each car has its own wash kit.
If you dry with towels, do not use dryer sheets, they leave funky smear like marks (removable) on the finish.
Highly recommend a softwater filter/kit/kart etc.
Been doing this method for nearly 10 years, I get many compliments on the mirror like finish.

Whichever mit/sponge you use, run it lightly over the panels of your car. The little bits that accumulate in your mit/sponge will cause major damage to your finish. You should almost be using zero pressure. As long as your vehicle is wet, the suds should be doing the work. This is if you have a well maintained vehicle.
Get a Grit-Guard for your bucket. Don't want your mit picking up crap from the bottom of your bucket.
