For a hotel I would recommend Tiergarten (for the great racing heritage atmosphere found from their Pistenklause restaurant!) or Dorint (F1 people place)

F1 People usually stay in the Dorint Hotel, I also stayed there on my first trip to the Ring. Sadly the price on the weekend is 188 /night

Tiergarten is the place to be. Its the only 3 star hotel with a million dollars worth of cars parked out front on any given weekend.
Also order the steak on a stone at the PK(resturant to the tiergarten), another ring classic.

Dorint is a downright over-priced for what it is, it's a 3.5* hotel where some famous blokes happen to stay once a year. Rooms clean but basic, food not that great either.
Never stayed at the Tiergarten but if it happens to be full, there are good options in Wiesemscheid, a few minutes away by car.

What are you driving on the Ring? I rented a Cayman S from Avis in Frankfurt in May.
Apparently I was forbotten from driving it on the Ring, but I never saw it in the contract, nor did I get any grief from anyone.
Enjoy it, it is awesome.

All cars from car rentals are not allowed at the ring except those ring car rentals where you specially rent cars for the ring.
Do you speak german? There are some family owned pensions directly in Nurburg. You will find them via http://www.tourist-info-nuerburg.de/.../pensionen.php Those aren't 3 or 4* rooms, but the most are nice to stay and you get a real good breakfast the next morning.
Sadly most of those owners don't speak english very well, so if you need some help: let me know.

I can remember the name of it but in '03 I stayed at a little B&B that is right by track near the bridge. sorry i dont know the name of the track sections. the B&B is actually visible from the track and is nicely modelled in gran tourismo. the owner at the time had a aprilia 1000 and i saw him out on the ring that afternoon blowing by my lowly bmw 320 rental.

They are not forbidden by the Nurburgring GmbH, they are forbidden within your rental contract! Anywhere in it is a passage about "using the car on a race- or test-track" or something like that (I know that only in german).
