He does that to advertise his skill and his main business. He takes a huge loss on every meal he serves.

Simple...he keeps open an entire establishment just for one table. Between food costs, operating costs, and staff costs, he loses money on the meals. Restaurants have so much overhead, that you would never buy it back with one table. However, he is not serving those meals to make money. It is simply to draw attention to the main business.

Yes and No actually.

His main business is the market - that does VERY well - but his passion is cooking so i think he does it for fun mostly. With that said, at the rates he charges i think he actually does make some decent money doing the "one table thing"......

But i see the point you are making - and the dinner DEFINATELY makes you want to come back and shop in the little market.

BTW, he will also let repeat customers sit in the kitchen during the meal and watch him work/eat right from the stove type of thing! That is next on my list

$100 - $120 per person is not a lot for a chefs table, high quality food prep, approximately one staff member per person and no wine mark up. He's probably breaking even to probably losing a little. Love chefs tables!

Give me $120 a person ill cook you the meal of your life! Depending on the area $120 a person he is making a mint.

Simple math:

120 a person 4 tables a day say 5 days a week

Thats about 10k a month plus grat. and beer wine..

He isnt making a killing but sure is making money. And the fact that he is sold out for the year..

It all boils down to what he serves I guess..
