Try Orange County Race Craft ocracecraft.com/ they run at El Toro Air Base for two days. The first day is skid pad, braking etc. and after lunch you hit the track. Day two is pretty much all track time. You can have an instructor ride with you which is included with the price and a great catered breakfast and lunch.

Speed Ventures runs at different tracks in California including Fontana and Laguna Seca speedventures.com/. With SV you can get a transponder ($20) to keep track of your lap times for each session, and you can even have an instructor for some extra $ to ride with you from 1 to 5 sessions to learn "the line" and just get some pointers on the track.
