I wouldn't touch the V6's. The 2.0t is a honey of an engine which loves mods, and is capable of good power. The 2.0t's are lighter and more responsive.
We have a fully stock Passat 2.0t, and it's an outstanding family car, that's comfortable, capable, has sufficient power, and gets 33mpg all day long at 90mph.

Only thing I wish my car had was dsg!

I guess it comes down to taste. A quick $400 chip, and you can get an easy 50-80 more hp, in a lighter, better balanced package. The 3.6 is smooth, though, and sounds better than the 2.0t.
I want the 2.0t in my Impreza. It's a sweet engine, torque everywhere.

I've been contemplating this car for a bit, but I'm really stuck on a suv right now though

My brother and I test drove a 3.6 4motion fully loaded and it is a beautiful car. Has a sporty ride and nicely finished interior. Like others have said, it is a great car for the money. The 4 person interior (rear seats have nice bolsters as well) gives it a luxurious yet sporty look. New nav seemed great (I only played with it for a few minutes, but it seemed like an intuitive and easy to use system. Touch screen FTW) The auto tranny is very nice as well. It shifts quickly and rev-matches nicely. I wouldnt let that be a deal-breaker (you can always opt for the 6-speed too ).
